Buy on Amazon ← Back to productsMaple is one of the most valued hardwoods in the professional culinary industry, and that's no accident. Its tight grain and high density make it naturally resistant to moisture and bacteria, unlike porous woods or plastic, which develop micro-scratches with use where organic residue builds up. It's also firm enough not to give way under cuts, yet keeps just enough flexibility to protect your knives' edge — something bamboo or glass boards can't match.
Our maple is 100% Canadian, and that makes a real difference: Canada's cold climate forces the tree to grow more slowly, producing tighter rings and a more uniform, denser grain than wood from temperate climates. The result is a board that resists wear better and is less prone to cracking over time.
At 51 x 41 x 2.5 cm, the No. 02 is the mid-size board in the Pro Maple line: the right balance between work surface and storage space. It handles chopping, cutting and filleting large portions without losing maneuverability, and works just as well as a presentation board for cheese and charcuterie at the table. It keeps the same 2.5 cm thickness that gives it stability and keeps it from warping over time.
